We all have things in the back of our mind that we want to do that we haven’t gotten to try yet. I traded law school for chocolate school and have wanted to become a chocolatier for the longest time. Even though Valrhona Chocolate school might be the dream school, who knows, maybe I’ll take a trip to France or Switzerland…
Molten chocolate cake ingredients:
1 1/4stick unsalted butter (rm temp)
1/3 cup granulated sugar (plus more to coat baking tin)
3 large eggs
1/3 cup all purpose flour
1/4 tsp salt
8 ounces (227 grams) bittersweet chocolate (melted)
1-Preheat oven 204c
2-grease and dust tin with sugar
3-electric mixer-paddle attachment-melt chocolate(set aside)-cream butter and sugar until fluffy- add eggs one at a time. Beat well after each addition-turn to low speed, beat in flour and salt until just combined-beat in melted chocolate till just combined-
4-bake10 mins remove and let stand for 10 minutes
-use quality dark chocolate 70-85%
-test baking time if possible, bake one first.
-make sure butter and sugar are beat till light and fluffy!! Don’t rush.
